Patrick Martens
Director of Food & Beverage, Gaysorn Group
Patrick Martens is a senior hospitality leader with more than two decades of international experience shaped across Europe, Hong Kong, and Thailand. Born in Wermelskirchen, Germany, and trained at the Grand Hyatt Berlin, he built his early culinary foundation in world-class restaurants including the 3-Michelin-star “Im Schiffchen” and later joined the opening teams of Zuma in London, Hong Kong, Miami, and Bangkok; playing a key role in scaling one of the world’s most influential contemporary dining brands.
After relocating to Bangkok, Patrick expanded from culinary excellence into holistic hospitality leadership. He successfully conceptualized and operated multiple independent venues for private investors before joining Ratchaprasong Food Services (RFS) at Gaysorn Village in 2017. Beginning as Executive Chef for Riedel Restaurant & Wine Cellar, he rapidly grew into the Director of Food & Beverage role, responsible for an ecosystem of premium brands including Riedel Restaurant, the 1823 Tea Lounge by Ronnefeldt, and Gaysorn Urban Resort and Raynue at Gaysorn Amarin.
Since 2021, Patrick’s role has evolved far beyond traditional F&B. He now serves as a key driver of placemaking and experience-led development at Gaysorn Village, working closely with ownership and executive leadership to shape hospitality strategy, elevate tenant experience, and strengthen the district’s positioning as Bangkok’s most lifestyle-centric mixed-use destination. His work has contributed directly to the reawakening of Gaysorn Amarin and the transformation of multiple assets within the Gaysorn Group portfolio, while managing the day to day and strategic business development of the 4 core brands.
Patrick’s strength lies in bridging hospitality, brand building, and real-estate value creation. He brings a developer-focused perspective to mixed-use environments, ensuring that restaurants, cafés, wellness venues, community spaces, and event platforms are designed not merely as tenants—but as experience engines that drive footfall, enhance dwell time, and create emotional connection with a property.
As a Certified Master Coach, he leads with a people-centric philosophy, developing teams and brands that evolve beyond operations into long-term placemaking assets.
Today, Patrick is focused on collaborating with forward-thinking developers and owners to create high-impact hospitality experiences within mixed-use, retail, lifestyle, and boutique hotel projects across the region—merging his deep operational expertise with strategic vision for experiential real estate.
